Yields 4-6 servings
Ingredients:
1 Tbsp. oil
1/3 cup fresh lime juice
Zest of one lime
¼ cup gold Tequila
2 Tbsp. honey
1 tsp. Bolner’s Fiesta Brand Cumin
1 tsp. Bolner’s Fiesta Brand Paprika
1 tsp. Bolner’s Fiesta Brand Garlic Powder
¼ tsp. Bolner’s Fiesta Brand Cayenne Pepper (optional)
1 ½ tsp. salt
2 ½ pounds chickend rumettes and wingettes
Directions:
In a large zip top bag, add the first 10 ingredients and mix well. Add the chicken wings to the marinade, remove as much as the air as possible, seal and refrigerate for 2-4 hours.
Preheat oven to 425 degrees. Remove the wings from the marinade and place on a parchment lined sheet pan. Reserve the marinade for later use. Bake the wings at 425 degrees for 25 minutes. Flip the wings and baste with about 1/3 cup of the reserved marinade, pouring it evenly over all the wings. Place back in the oven and cook for another 15 minutes. Flip the wings back over and baste again with another 1/3 cup of the marinade. Cook for another 10 minutes or until caramelized and chicken cooked through. Garnish with chopped parsley and serve warm.
