Mango Habanero Salmon With Cilantro Lime Pepper Rice

Ingredients:
- 4 skinless salmon filets (6 to 8 oz. each)
- 2 tbsp. olive oil
- 4 tbsp. Bolner’s Fiesta Brand Mango Habanero Rub
- 1 cup white rice
- 1 tbsp. butter
- 1/4 cup chopped cilantro
- 2 tbsp. Bolner’s Fiesta Brand Lime Pepper

Instructions for Salmon
- Pat salmon filets dry and brush each filet with 1/2 tbsp. olive oil. Season the top of each filet liberally with 1 tbsp. Mango Habanero Rub.
- Preheat oven to 325 °F and place seasoned filets on baking sheet approximately one inch apart.
- Cook for 15 to 20 minutes until fish reaches 145 °F internal temperature (medium).
Pro Tip – keep a close eye on temperature to avoid dry salmon. - Let rest for 3 to 5 minutes and serve with cilantro-lime rice (instructions below).
Instructions for Rice
- Combine 1 cup white rice with 2 cups water in a medium saucepan and bring to boil.
- Once rice reaches boil, reduce heat to low and simmer for 15 to 20 minutes until all water is absorbed.
- When water is absorbed, add butter, cilantro, and Lime Pepper to rice and fluff together with fork. Let sit in saucepan for 5 to 10 minutes to allow flavors to combine.
