Mango Habanero Shrimp Skewers

Yields: 6-8 servings
Ingredients:
- 2 lbs. of jumbo or colossal shrimp
- 2 limes, juiced and zested
- 6 tbsp Bolner’s Fiesta Brand Mango Habanero
- ÂĽ cup extra virgin olive oil
- 3 bell peppers
- 2 yellow or sweet onions
Directions:
- In a large mixing bowl, juice and zest 2 limes. Add the olive oil and the Mango Habanero seasoning.
- Cut peppers and onions into pieces that would fit well onto a skewer and add them to the bowl.
- Remove the skin (and optional tails) from shrimp and add them to the bowl.
- Gently stir all the ingredients together until the shrimp, peppers and onions are well coated.
- Put the ingredients onto skewers, alternating ingredients in the placement.
- Grill for 5 to 7 minutes on each side.
Serve over rice and enjoy!
