Oven Beef Stew: The Ultimate Cozy Meal

Instructions

  1. Preheat oven to 325°F. In a large bowl, add the stew meat and season with the steak seasoning and garlic powder. Toss to coat evenly.
  2. Preheat a large oven-proof 7 qt Dutch oven over medium-high heat. Add oil and half of the stew meat. Brown on all sides, remove from the pot, and repeat with the other half of the stew meat.
  3. Add the onions, mushrooms, and celery to the pot and sauté for 2-3 minutes, scraping up any bits left by the meat.
  4. Return the meat to the pot and add the wine, beef stock, bay leaves, parsley, and pepper. Cover the Dutch oven with a lid, place in the oven, and cook at 325°F for 2 hours.
  5. Carefully remove the pot from the oven and take off the lid. Add additional water or stock if the meat mixture looks dry. Add potatoes and carrots to the pot, stir to combine, and return to the oven for another 1 ½ hours.
  6. Combine ½ cup water and the cornstarch, stirring well to combine. Remove the Dutch oven from the oven and immediately add the cornstarch mixture to the stew, stirring until thickened. If needed, bring the stew to a simmer on the stovetop to thicken further.
  7. Add peas to the stew and stir gently. Taste and adjust salt and pepper as desired. Discard bay leaves before serving.
  8. Serve in bowls, garnished with chopped parsley.

Instructions

  1. In a small saucepan, combine dried chilies, ½ cup onion, 3 garlic cloves, ½ tsp. salt, and water, and bring to a boil over medium heat. Cook for 10 minutes, turn heat off, and let sit for 20 minutes. Pour the chilis and liquid into a blender, blend till smooth, and set aside. Use caution when blending hot liquid.
  2. In a Dutch oven or 6-quart stock pot, heat the oil or bacon drippings over medium-high heat. Add the remaining onion, celery, carrot, and season with 1 ½ tsp. salt. Cook for 6-8 minutes until the vegetables are tender and start to brown.
  3. Add the diced zucchini and the remaining 3 garlic cloves (finely chopped) and cook for an additional 5 minutes.
  4. Add the and the pureed chilis, and cook for another 1-2 minutes, stirring constantly.
  5. Add the chicken stock, tomato sauce, beans, hominy, Mexican Oregano, and bay leaf. Bring to a boil and simmer on low for 30-35 minutes.
  6. Right before serving, add the pasta to the soup and cook for another 6-8 minutes or until the pasta is tender. Taste and adjust salt as needed.
  7. Serve topped with sliced avocado, shredded jack cheese, sour cream, diced purple onion, and lime wedges.

Black Bean Ole’

Our Aunt Bev Loves her black beans. She suggests 1 lb. Black Beans, 1-14 oz. can whole tomatoes, 8 Tbls. Bolner’s Fiesta Brand® Black Bean Ole’ Seasoning, 1 1/2 quarts water, and 1 lb. ham chunks or sausage. Rinse beans and cover with water and tomatoes. Cover and bring to a boil. Reduce heat and simmer 2-3 hours or until tender adding hot water when needed. Add 8 tablespoons Bolner’s Fiesta Brand® Black Bean Ole’ Seasoning, ham or sausage if you desire it and simmer another 30 minutes. Garnish with sour cream, pico-de-gallo and Monterey Jack Cheese. Black Bean Ole’ may be prepared ahead and frozen. Serve as an entree or as a side dish with Fajitas, Mexican Rice or puree for chalups, crispy tacos or Mexican style layer dip.

Authentic Menudo

Menudo is best served piping hot with tortillas for dipping, and can be chilled and reheated for several days, which only intensifies the flavor.
