Bean and Cheese Dip
From pre-game to post-game; the snack that never fumbles!
Prep Time: 15- 20 minutes
Cook Time: 12-15 minutes
Yields 10-12 servings
Ingredients:
- 10 oz. can RO-TEL (Diced Tomatoes and Green Chilies)
- 27 oz. can pinto beans
- 16 oz can refried beans
- 1 cup sour cream
- 1 tsp salt
- ½ cup diced pickled jalapenos
- 2 cups shredded Oaxaca cheese
- 2 tsp Bolner’s Fiesta Brand Minced Onion
- 1 tsp Bolner’s Fiesta Brand Smoked Paprika
- 2 tsp Bolner’s Fiesta Brand Comino (Cumin)
- 2 tsp Bolner’s Fiesta Brand Garlic Powder
- 1 tsp Bolner’s Fiesta Brand Ground Black Pepper
- 2 tsp Bolner’s Fiesta Brand Taco Seasoning
- Chips, for dipping
- Optional Garnishes: cilantro, green onion, white onion, sliced jalapenos, diced tomatoes or avocado
Directions:
- In a large mixing bowl combine RO-TEL, pinto beans, refried beans, pickled jalapenos, and all spices except for the Taco Seasoning. Stir until everything is well incorporated. Add the mixed contents to a cast iron skillet or oven safe baking dish.
- Combine the Taco Seasoning and sour cream and stir until mixed well. Evenly spread the sour cream mixture over the bean mixture.
- Top with the shredded Oaxaca cheese, spreading it evenly over the top.
- Bake for 12-15 minutes at 375 degrees.
Serve immediately with your favorite tortilla chips!
