Grab-and-Go Gourmet Egg Cups

Directions:

  1. Preheat your oven to 350 °F.
  2. Grease a regular size muffin tin and set aside.
  3. Devine and remove seeds from bell pepper.
  4. Dice onions and peppers into small pieces.
  5. In a large skillet, crumble and slightly cook sausage until fat is released.
  6. Using a slotted spoon, remove the cooked sausage and leave the fat in the pan.
  7. Add diced onion, to the sausage fat and stir on a medium low setting until the onions are translucent, about 15 to 20 minutes.
  8. Add diced bell peppers and cook for an additional 5 minutes.
  9. In a large bowl, whisk together eggs, milk and Uncle Chris’s Gourmet Steak Seasoning.
  10. Add the cooked onions, peppers and sausage to the egg mix.
  11. Drain the water from the can and add the diced potatoes.
  12. Add the shredded cheese and stir until everything is mixed well together.
  13. Pour roughly ¼ cup of the mixture into each greased muffin tin and bake for 20-25 minutes.
