Grab-and-Go Gourmet Egg Cups

Yields: 12-15 servings
Ingredients:
- 15 eggs
- 1 lb. ground breakfast sausage, plain
- 2 bell peppers
- ¾ cup Bolner’s Fiesta Brand Uncle Chris’s Gourmet Steak Seasoning
- 3 yellow or sweet onions
- 1 15 oz can diced potatoes, water drained
- 2 cups shredded sharp cheddar cheese
- 1 cup whole milk
Directions:
- Preheat your oven to 350 °F.
- Grease a regular size muffin tin and set aside.
- Devine and remove seeds from bell pepper.
- Dice onions and peppers into small pieces.
- In a large skillet, crumble and slightly cook sausage until fat is released.
- Using a slotted spoon, remove the cooked sausage and leave the fat in the pan.
- Add diced onion, to the sausage fat and stir on a medium low setting until the onions are translucent, about 15 to 20 minutes.
- Add diced bell peppers and cook for an additional 5 minutes.
- In a large bowl, whisk together eggs, milk and Uncle Chris’s Gourmet Steak Seasoning.
- Add the cooked onions, peppers and sausage to the egg mix.
- Drain the water from the can and add the diced potatoes.
- Add the shredded cheese and stir until everything is mixed well together.
- Pour roughly ¼ cup of the mixture into each greased muffin tin and bake for 20-25 minutes.
