  2. Rinse the beans thoroughly under cool water before transferring them to a large pot.
  3. Cover the beans with water in the pot and let them soak in the refrigerator overnight.
  4. Drain the soaking water and refill the pot with fresh water, making sure it covers the beans by about an inch.
  5. Place the meat into the pot with the beans and bring everything to a rolling boil.
  6. Reduce the heat, stir in the Pinto Bean seasoning, and let it simmer for 2 hours until the beans are soft and tender.
